I’m trying to give up meat gradually. How long did it take you before you were a total vegetarian or vegan? Was it hard?

When I say “vegetarian” I am referring to the ovo-lacto vegetarian.
And when I say “vegan” I am referring to no meat and no dairy products etc.
Please be specific.

I am planning to open up a hot dog cart selling veggie/vegan dog and perhaps a mobile food cart to sell other veggie foods such as veggie burger/sandwich/fried rice/chow mein, etc..Everything veggie..Please help.
